The White Truffle (Tuber Magnatum Pico), also known as Alba truffle or Tartufo di Acqualagna, is the most prized of all truffle varieties by chefs and gourmands around the world.
Only available a couple of months of the year, white truffles are an extremely rare delicacy that cannot be cultivated but grows wild, almost exclusively in some parts of Italy. We supply high quality fresh Italian truffles harvested in Central Italy.
White truffles have a unique, intensive and exclusive aroma. They should not be cooked but shaved raw into paper-thin slices over your dish just before serving.
We recommend a serving size of 7-10 grams of fresh white truffle per dish per person.
The Black Winter Truffle (Tuber Melanosporum Vittadini) grows in hilly and mountainous areas, in symbiosis with hazelnut trees, oaks. The Black Winter Truffle is considered very prestigious and reigns as queen in international cuisine.
They are harvested from December to March.
