Organic Emmer - Farro
Emmer, also known as farro, is an ancient wheat that has been cultivated for over 10,000 years. Popular in Egypt during the time of the pharaohs, today emmer has nearly disappeared from modern agriculture, but it is still an important crop in Italy.
Because of its rich flavour and high nutritional properties, it has been rediscovered worldwide as a gourmet grain. High in protein, fiber, and minerals, emmer has also a lower gluten content than wheat.
Since it has become fashionable, there are a lot of "farros" around. This one, organically grown in the Umbrian mountains of Monteleone di Spoleto, is the only one certified PDO.
